Have a few bananas on the counter looking like they’re on their last day?

Turn them into this delicious, gluten-free banana bread.



1/3 cup melted coconut oil

1/2 cup honey

2 eggs

1 cup mashed ripe bananas

1/4 cup water

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 3/4 cups Bob’s Red Mill’s Gluten Free Flour

1 cup chocolate chips, nuts, cranberries, etc. (optional)



Preheat oven to 325.  Grease a 9×5 loaf pan.  In a large bowl, beat oil and honey together.  Add eggs, one at a time, and beat well.  Mix in mashed bananas and water.  Whisk in baking soda, salt and cinnamon.  With a wooden spoon, stir in flour just until combined.  Stir in any chocolate chips, nuts, cranberries, etc. Pour batter into pan and bake for 55-60 minutes.
